This place was common for every service member on Okinawa to eat at at least once a week, sometimes thrice. You have a fantastic menu where you select the portion size of the rice, the type of curry, the spiciness of it from up to Level-10. Level-10 is delicious but there is a distinct step from levels 9 to 10.. like numb your tongue and maybe not taste the delicious flavors of the panko breaded cutlet or octopus if you are into that delicacy.

  • 2 chicken breasts, pounded to even thickness
  • Salt and pepper to taste
  • 1 cup panko breadcrumbs
  • 1 egg, beaten
  • Vegetable oil (for frying) OR air fryer option
  • 1 large onion, chopped
  • 2โ€“3 carrots, peeled and diced
  • 2โ€“3 potatoes, peeled and diced
  • 1 package S&B Golden Curry Mix (medium-hot recommended)
  • 4 cups water
  • Cooked white rice (for serving)

  1. Season chicken with salt and pepper.
    Dip in beaten egg, then coat evenly with panko breadcrumbs.
  2. Heat oil in a pan over medium-high heat.
    Fry chicken until golden and fully cooked.
    Alternative: air fry until crispy and cooked through.
  3. In a large pot, heat a small amount of oil over medium heat.
    Add onion and cook until translucent.
  4. Add carrots and potatoes. Stir and cook for a few minutes.
  5. Add 4 cups of water and bring to a boil.
    Reduce to a simmer, cover, and cook ~30 minutes until vegetables are tender.
  6. Break curry roux into pieces and stir into the pot until fully dissolved.
  7. Optional flavor upgrade:
    Add small amounts of cumin for depth, or 1โ€“2 tbsp ketchup for classic Japanese home-style sweetness.
  8. Simmer 10โ€“15 minutes until curry thickens.
  9. Serve curry over rice. Place crispy chicken cutlet on top.
