A cozy dessert to share

After-cuddle brown-ee

Fudgy cocoa brownies, dark chocolate chips, and a ribbon of caramel—best enjoyed a little warm, with your favorite ice cream.

By thy.scot Dessert

These rich brownies pair bittersweet chocolate with buttery caramel for a soft-centered treat. The recipe makes one 9-by-13-inch pan, so there’s plenty to share—or to wrap and save for later.

Caramel & dark chocolate brownies

A simple, fudgy brownie with a gentle caramel swirl. For the neatest slices, let the pan cool before cutting.

  • Prep: 15 minutes
  • Bake: 25–30 minutes
  • Total: about 45 minutes, plus cooling
  • Makes: 16 brownies
  • Oven: 350°F (175°C)

Ingredients

  • 1 cup (226 g) unsalted butter
  • 2 cups (400 g) granulated sugar
  • 4 large eggs, ideally at room temperature
  • 1 teaspoon vanilla extract
  • 1 cup (125 g) all-purpose flour
  • 3/4 cup (about 75 g) unsweetened cocoa powder
  • 1 teaspoon salt
  • 1 cup (about 170 g) dark chocolate chips
  • 1/2 cup thick caramel sauce, plus more to serve if you like
  • Ice cream, for serving (optional)

Method

  1. Prepare the pan. Heat the oven to 350°F (175°C). Line a 9-by-13-inch baking pan with parchment paper, leaving a little overhang on two sides, or grease the pan well.
  2. Melt the butter. Warm the butter in a saucepan over low heat. Take it off the heat and whisk in the sugar. Let the mixture cool for a few minutes—it should be warm, not piping hot.
  3. Add the eggs and vanilla. Whisk in the eggs one at a time until combined, then stir in the vanilla.
  4. Mix the dry ingredients. In a separate bowl, whisk together the flour, cocoa powder, and salt. Fold them into the butter mixture just until no dry streaks remain; avoid overmixing.
  5. Add the chocolate. Fold in the dark chocolate chips.
  6. Layer and swirl. Spread half the batter in the prepared pan. Spoon the caramel over the batter, keeping it away from the edges. Carefully spread the remaining batter over the top. Draw a knife through the layers a few times to make broad swirls—too much swirling blends the caramel into the batter.
  7. Bake. Bake for 25–30 minutes. The edges should look set, while the center remains a little soft. A toothpick inserted into a brownie section should come out with moist crumbs, not liquid batter. Avoid testing directly in a pocket of caramel.
  8. Cool and slice. Let the brownies cool in the pan before cutting. For especially clean slices, cool completely and wipe the knife between cuts.

Serving idea

Warm a brownie briefly, add a scoop of vanilla or coffee ice cream, and finish with a little extra caramel. A cup of coffee or tea goes nicely alongside.

A sweet little ritual

Put on a favorite piano piece, make a cup of something warm, and let the brownies cool long enough to slice. The recipe is easy to share, but it’s just as good saved for a quiet moment the next day.

However you serve them, the best result is the one you enjoy: a soft middle, crisp edges, dark chocolate in every bite, and just enough caramel to make the whole pan feel special.
